Paksiw na Salmon

Yesterday, I was craving for Paksiw but I don’t wanna go to Philippine store to buy for Milkfish or Bangus in Tagalog. So, what I did is I log in Timog Forum (an online filipino community forum here in Japan) and search for “Paksiw na Isda” thread. Luckily, there is! I ask if beside bangus what other kind of fish can i use for Paksiw. Somebody replied Salmon, good timing coz my hubby wants salmon for dinner but im still confused. While deciding I saw my friend online I ask her if its OK!? I will use salmon in paksiw she replied ” Sosyal! galunggong nga pwede eh…”I made my decision to cook “Paksiw na Salmon.”

Here is my Recipe:
2Salmon Sliced
1Big egg plant (Nasu in Japanese)
4pcs. Green Chili
1small Ginger
1small Onion
3pcs. garlic
1/4cup Vinegar
1teaspoon olive oil
pepper, salt, ajinomoto
1/4 cup water

Direction:
Rub some salt to Salmon put in a pan. Put vinegar, eggplant, chillies, onion, garlic,ginger in a stewing pan. ( more better if non metal.)
Bring the vinegar to boil without stirring put 1 teaspoon oil. When the vinegar is nearly to dry put 1/4 cup water bring to boil. If the broth is thickened its done…
